Chickpeas
Nothing keeps you full like chickpeas. Roast them, boil them, bake them – they’re tasty either way.
You can dress them up with salt and vinegar, some olive oil and garlic, chili lime, or some simple salt and pepper.
Baked Veggie Chips
You can go absolutely crazy here. Choose from carrots, sweet potato, cucumber, eggplant, zucchini or whatever you’re into. You can simply bake them on their own with some salt and pepper, or add olive oil, spices or even coat them in bread crumbs!
And let’s not forget the yogurt and chives dip!
Fruit Roll Ups
Make your own fruit by the foot by pureeing your favorite fruits and spreading them thinly on a baking sheet. Stick them in the oven and dehydrate the pulp.
When cooled, cut into long strips and roll up!
Mushrooms
Before you dismiss this as an option, try marinating mushrooms in a few spoons of olive oil, tons of garlic, dried herbs, a dash of vinegar and some sprinkles of salt and parsley!
Celery and Dip
Easy to carry and packed with nutrients, pair fresh celery sticks some super yummy dips; you could whip up some herby yogurt, add some sour cream or even make some tangy green tomato salsa!
